Historians recall the creation of Zouk Mikaël at the beginning of the 14th century. It is located 14 kilometers north of Beirut.
Traditional houses from stone and red bricks that have preserved their ancientness surround until today the Old Souk. Plaisirs de la table Zoukiote

Les Zoukiotes sont connus pour leur accueil chaleureux, leur générosité et leur hospitalité, ainsi que pour leur maitrise de la cuisine libanaise, notamment le « topinambour marin », le massepain et le sambousek. Ces derniers étant préparés â partir d’amandes cueillies des amandiers de Zouk Mikael, symbole de la ville et un pilier de son économie.
• Le Massepain
Réputé pour son goût délicieux, il est préparé à partir d’amandes, de sucre et de l’eau de fleur d’oranger.
• Le sambousek
Pâtisserie traditionnellement préparée pour les fêtes pascales. Le sambousek est composé de semoule fine, de beurre, de mahleb, de muscade, de mastic, de l’eau de rose, de l’eau de fleur d’oranger, de la levure de bière, de sucre, d’amandes ou de noix pilées.
• Le tapinambour marin
C’est une entrée salée, préparée à partir de taro, d’oignons, de l’ail hachée avec la menthe, de lentilles, de sel, d’eau, de citron, d’huile d’olive et de jus d’orange amer.

The Zouki Kitchen

Zoukis have always been known for their hospitality, generosity, and their knowledge of the Lebanese cuisine.
They have their own recipes such as “Elephant’s Ear”, that they plant near the beach, the marzipan candy and sambousik (almonds are a key component of both and those are the trees that mark the Zouki nature)
• Marzipan:
Made of Almonds, sugar and rosewater
• Sambousik:
Made of fine semolina, butter, Mahlab, nutmeg, mastic, rose water. orange blossom water, yeast, sugar, almonds or walnuts.
• Elephant Ear:
It is made from lentils, taro, souring agents, olive oil, and bitter orange juice, with the addition of garlic, onion, and mint.

المطبخ الزوقي

اشتهر الزوقيون بالضيافة والكرم وإتقان المطبخ اللبناني. فالطبق التقليدي في الزوق هو القلقاس البحري الذي يزرعونه في سهل الوطى (على الشاطئ). أما الحلوى فيختَصُّ الزوقيون بالمرصبان والسنبوسك ومادتهما الأساسية اللوز، وهي الشجرة التي وَسَمَت الطبيعة الزوقية.
• المرصبان:
يُصنع من اللوز والسكر، وماء الزهر.
• السنبوسك:
يصنع من طحين الفرخة، الزبدة ، المحلب ، جوزة الطيب، المستكة، ماء الزهر، ماء الورد، خميرة ، سكر، لوز أو جوز.
• القلقاس البحري:
يصنع من العدس، القلقاس، والحامض وزيت الزيتون وعصير ليمون بوزفير ويُضاف إليهم الثوم والبصل والنعناع.

أقف اليوم بينكم في هذا اللقاء الذي يجمعنا في واحدة من أجمل بقاع لبنان، لنحتفل معًا بتدشين مشروع الدرع البيئي والمسار الألبي الرياضي المستدام لبحيرة شبروح، هذا المشروع الذي يتجاوز كونه إنجازًا إنشائيًا أو سياحيًا، ليجسد رؤية متكاملة للتنمية المستدامة، تقوم على احترام الطبيعة، والاستثمار في الموارد البيئية، السياحيّة والرياضيّة، بما يخدم الإنسان والمجتمع والاقتصاد المحلي في آنٍ معًا مع الأخذ بعين الإعتبار والتشدّد على تطبيق أعلى المعايير البيئيّة والفنّيّة لهكذا موقع دقيق وحسّاس.
إن وجودنا اليوم، يتقدّمنا معالي وزير الطّاقة الأستاذ جو الصدي، مع سعادة النّوّاب الكرام والفعاليّات الكسروانيّة يعكس الاهتمام الذي توليه الدولة اللبنانية للمشاريع الإنمائية التي تنطلق من الشراكة مع السلطات المحلية، ويؤكد أن البلديات واتحادات البلديات ليست مجرد إدارات محلية تقدم الخدمات العاديّة اليومية، بل هي شريك أساسي في رسم مستقبل المناطق، وفي إطلاق المبادرات التي تخلق فرصًا جديدة للتنمية والإنماء.
لقد أنعم الله على كسروان بثروة طبيعية استثنائية، من جبالها الشامخة إلى غاباتها وينابيعها وأوديتها وبحيراتها ومجاري مياهها، وهي ثروة لا تقل قيمة عن أي مورد اقتصادي آخر، بل تشكل اليوم أحد أهم عناصر التنمية المستدامة في العالم.
إن بحيرة شبروح ليست مجرد خزان للمياه، ولا مجرد موقع طبيعي جميل، بل أصبحت رمزًا لقدرة الإنسان على التفاعل الإيجابي مع الطبيعة، وعلى تحويل المواقع البيئية إلى مساحات للحياة ...، تجاه ذلك، فإن مسؤوليتنا لا تقتصر على حماية هذه الثروة، بل تمتد إلى حسن إدارتها واستثمارها بطريقة علميّة، بيئيّة، متوازنة، بحيث تبقى مصدر حياة وجمال ونقاء مستدام للأجيال القادمة، وفي الوقت نفسه رافعةً للاقتصاد المحلي وللقطاعات السياحية والرياضية والبيئية والإجتماعيّة والثّقافية.
واليوم، مع افتتاح هذا المسار الرياضي البيئي، نوجّه رسالة واضحة مفادها أن التنمية الحديثة لا تعني الإسمنت والإسفلت فقط، ولا تُقاس بعدد الأبنية أو الطرقات، بل تُقاس أيضًا بمدى احترامنا للبيئة وآثارها، وبقدرتنا على خلق مساحات عامة تحافظ على الطبيعة وتشجع الناس على ممارسات رياضيّة صحية ومستدامة.
أيها الحضور الكريم،
لقد أثبتت التجارب في مختلف دول العالم أن الاستثمار في السياحة البيئية أصبح من أكثر القطاعات نموًا، لأنه يجمع بين حماية البيئة وتحريك الدورة الاقتصادية، ويخلق فرص عمل، ويعزز حضور المناطق الريفية والجبلية كما السّاحليّة على الخريطة السياحية.
نطمح إلى أن تصبح هذه المبادرة نموذجًا يؤخذ ويُعمل به في مختلف المناطق اللبنانية، وأن تستمر الشراكة بين الدولة والسلطات المحلية في تنفيذ المشاريع التي تجمع بين التنمية وحماية البيئة.
أكرر شكري لمعالي الوزير على رعايته الكريمة، ولجميع من ساهم في هذا الإنجاز، لا سيّما بلدية فاريا بشخص رئيسها الزّميل رشيد خليل ومجلسها البلدي الكريم وأتمنى لهذا المشروع كل النجاح والاستمرارية وأن يبقى هذا المكان مقصدًا لكلّ محبّ للطّبيعة والرّياضة.

Les Familles de Zouk Mikaël

Le mouvement migratoire vers Zouk Mikaël remonte à la conquête ottomane de 1516. Au fil des siècles, l’histoire de la localité a été marquée par d’importantes mutations démographiques, rendant difficile l’établissement d’un inventaire exhaustif des familles zoukiotes à travers les générations. La présente étude sur les indications relatives à l’origine des familles a été puisée dans les travaux du chercheur Tony Moufarrej et du professeur Toufic Wehbé.
1- Les familles maronites
• La famille Hani est originaire d’Ehden. Elle s’établit vers 1583 à Ghazir, avant qu’une partie de ses membres ne vienne résider à Zouk Mikaël.
• La famille Aouad, issue de Hasroun, s’y fixa à la fin du XIIᵉ siècle.
• La famille El-Adem est originaire de Michmich.
• Les familles Debs et Raad proviennent de Ghazir.
• Les Kmeid sont issus de Jaj. Installés à Ghazir en 1545, certains de leurs descendants gagnèrent par la suite Zouk Mikaël et Beyrouth.
• La famille Gabriel quitta également Jaj en 1545.
• Les Hayek sont originaires de Hadath el-Jebbé.
• Les familles Salameh, Zogheib, Akiki, Sakr et Abi Khalil sont issues de Kfardebian ; de cette dernière branche est née la famille Kobeiter.
• Les Choukeir proviennent de Hrajel.
• Les Chalfoun, venus de Ghosta, donnèrent naissance à la branche des Naufal.
• Les familles Kassab, Tabet, Bardawil, Medawar et Matta sont originaires de Ajaltoun.
• La famille Ghanem est issue de Joura el-Badrane.
• Les familles Saadé et Beaïnou sont originaires de Mayrouba.
• Les Abi-Nader proviennent de Ghalboun.
• Les familles Boueiz et Abi-Chabké sont issues de Sarba.
• Les Naffaa sont originaires de Beit Chabab.
• Les Farah proviennent de Zouk Mosbeh.
• Les Soukayem, originaires de Batha, donnèrent naissance à la branche des Khoury.
• Les familles Trad, Fahed, Chidiac et Massaad sont issues de Achkout; certains membres de la famille Massaad furent connus sous l’appellation de « Aachkouti ».
• Les Hantouch proviennent de Klayaat.
• Les familles Abi-Chaker, Kazan, Abi-Chacra et Abi-Assaf sont originaires de Deir el-Qamar.
• Les Boustany sont issus de Ras Safra, à Akkar.
• Les Safi proviennent de Jeïta.
• La famille Tohmeh est originaire de Qornet el-Hamra.
• La famille Zaarour est issue de Qornet Chehwan.
• La famille Ghostine, originaire de Bcharré, est une branche de la famille Keyrouz.
• Les Hbalini proviennent de Hbaline.
• Les familles El-Kazzi et Saad sont originaires de Safra.
• La famille Achkar est issue de Dik el-Mehdi.
• La famille Turk provient de Yahchouch.
• La famille Aoun est originaire de Damour.
• La famille Karam est issue de Qartaba.
• La famille Wehbé provient du Chouf.
• La famille Attaya est originaire de Choueir.
• La famille Zaylaa est issue du district Kesrouan Ftouh.
• La famille Harb provient d’Aïntoura.
• La famille Azar est originaire de Dafné.
• La famille Hachem est issue d’Akoura.

Par ailleurs, les familles Darwich, Ferzane, Abdo, Karabach, Abou Warde et Sayyah figurent également parmi celles qui se sont établies à Zouk Mikaël.
2- Les familles grecques-catholiques
• Les familles Kattan et Medawar sont originaires d’Amioun, dans le caza de Koura.
• La famille Aoude provient de Douma.
• Les familles El-Doqui, Salamouny et El-Ajoui sont originaires d’Alep.
• La famille Zeinié provient de Tripoli.
• La famille Takla est issue de Kfarchima.
• Les familles Bechwaty, Jahel et Mogharbel sont originaires de Zahlé.
• La famille Samaha provient de Khenshara.
• La famille Jamati est originaire de Saïda.
• La famille Domyati est issue de Domyat, en Égypte.
Les habitants de Zouk Mikaël
Selon le professeur Toufic Wehbé : « les habitants de Zouk Mikaël se distinguent par leur aversion pour l’injustice.
Ils ne se soumettent à aucun oppresseur, tout en se gardant eux-mêmes de toute forme d’agression. Étrangers à l’orgueil comme à la suffisance, ils cultivent naturellement l’esprit de concorde.
L’affabilité et l’attachement mutuel constituent des traits essentiels de leur caractère collectif ».

The Families of Zouk Mikael

The migration movement toward Zouk Mikael dates back to the Ottoman conquest of 1516. Over the centuries, the history of the town has been marked by significant demographic changes, making it difficult to establish a comprehensive inventory of Zouk Mikael’s families across generations. The present study on the origins of these families draws on the research of Tony Moufarrej and Professor Toufic Wehbé.
1- Maronite Families
• The Hani family originates from Ehden. It settled in Ghazir around 1583, before some of its members later moved to Zouk Mikael.

According to Professor Toufic Wehbé: “The inhabitants of Zouk Mikael are distinguished by their aversion to injustice.
They submit to no oppressor while refraining themselves from any form of aggression. Strangers to both pride and arrogance, they naturally cultivate a spirit of harmony and mutual understanding.
Affability and strong mutual attachment are among the essential characteristics of their collective identity”.
