Pork Collar -

It’s a nice neat muscle that requires no trimming, and it’s a lot of fun to cook.

Also referred to as Coppa, it is essentially the same muscle that makes up the ribeye and the loin, but it’s in the neck, gets a lot of use, and because of that it has some great intramuscular marbling. (It’s got good fat all through it 🤌🤌)

“Like if a prime rib and a pork belly had a baby.”

Which makes sense now, it cooks on a tangible spectrum and there is a Goldilocks zone.

Juicy with some bite, yet fork tender at the same time.

If you pull it on the early side you will get a bite that is on par with a pork chop or tenderloin.

Cook it longer and it will fall apart like pulled pork.

Pitmaster Tyler hit the 🎯 on his first go at it, and that bodes very well for future cooks!

Going from a Saturday pop-up to a full-time, seven-day-a-week restaurant is a big leap — and we knew there would be lessons along the way.

For us, it’s not about doing it until we get it right. It’s about doing it until we can’t get it wrong.

That also means knowing when to pull back, make adjustments, and give ourselves the space to step forward with the quality and consistency we intended from the beginning.

So Monday through Thursday, this week and next, we will only be serving smoked burgers, smoked wings, and tallow fries while we continue dialing in our systems and preparing for what’s ahead.

This Friday, Saturday, and Sunday we will be serving our limited barbecue menu available on our website. Barbecue is served daily at noon.

Our full menu officially launches on Friday, October 2nd.

We appreciate everyone who has come through the doors, supported us, and been part of these first days at our new home. We’re building this for the long haul — and we want to build it right.

We are serving a limited menu as we continue to transition into our new home.

This upcoming Monday and Tuesday, 9/21 and 9/22, we will only be serving smoked burgers, smoked wings, and tallow fries while our team gets some needed rest and recovery.

The time has come to move on to our next evolution.

Come celebrate with us this Saturday for our final service at Sazon Peruvian!

It’s been a helluva time there over this last year and I am extremely grateful to have had kitchen to cook from, a place to serve you all at, and such a great platform to launch Red Eye Barbecue from.

We are serving up our standard menu of beef cheeks, pork ribs, chickens, beef ribs, jalapeño cheddar sausage and will be rocking a couple of our favorite pork belly specials from this last year, along with green rub pork ribs.
